DIY Dehydrated Backpacking Recipe: Curry Soup
Nothing beats a warm bowl of soup after a cold day on the trail. This easy, quick-to-prepare curry soup is a twist on a classic comfort dish. Warm, comforting, and flavourful, it’s packed with veggie goodness. It pairs well with rice crackers for an extra filling meal.
Food Safety Reminder
When dehydrating your own backpacking meals, always ensure all moisture is completely removed before packaging and storing. Improper dehydration can lead to spoilage and foodborne illness. Never consume a DIY meal if it looks or smells off.
Serving Size: 1 large meal or 2 light meals
Ingredients:
- ½ cup powdered coconut milk
- 1 tbsp curry powder or dehydrated paste (Patak’s mild curry paste recommended).
- ¼ of a small cabbage, dehydrated
- ¼ head of broccoli, dehydrated
- 1 carrot, dehydrated
- ¼ of a red pepper, dehydrated (optional)
- Dash of Smoked paprika
Dehydration Instructions:
Vegetables: Slice thinly and spread evenly on dehydrating trays. Dry until brittle.
Curry paste: Spread each sauce thinly on a plastic (non-stick) dehydrator sheet. When dry, it should be flexible (like fruit leather), oily but not moist, and peel off easily.
Dehydrate all wet ingredients at 135°F (57°C) until completely dry, usually 6–10 hours, but may vary depending on your dehydrator and the humidity. All ingredients should be completely dry when done: brittle and with no remaining moisture.
Packing:
Mix all ingredients in a Ziploc bag or vacuum-seal for a longer shelf life. Store in a cool, dry place. When properly dehydrated and sealed, this meal will keep for up to 6 months.
How to Prepare:
- Empty the meal into your pot and add a cup of water.
- Bring to a boil, then lower the heat and simmer for a few minutes until the vegetables have rehydrated. Add more water as needed if it’s too thick.
- Stir well, ensuring that the curry paste or powder is mixed.
